Breakfast: Banana Oat Muffins

So over the last couple days I’ve been looking into healthy muffin recipes.

Generally, I always want to create something low in calories and fat so this one worked out really well.

I definitely recommend them if you don’t have much time on a morning and need something to grab and go.

If you do have time for a sit down, I think they’d go really well served with yogurt or fruit – maybe even a little Lotus Biscoff spread as a naughty extra.

Recipe:

  • 2 Bananas
  • 2 Cups of oats (170g)
  • 1 Cup of ALPRO plain (245g)
  • 2 Eggs
  • 1/3 Cup of Sweet Freedom fruit syrup (113g)
  • 2 tsp Baking powder
  • 1 tsp Vanilla extract
  • 1tsp Cinnamon

Method:

Step One: Pre-heat oven for gas mark 6.

Step Two: Break bananas into a bowel and mash with a fork, or blend with an electric hand whisk.

Step Three: Add oats, yogurt, eggs, fruit syrup, baking powder, vanilla and cinnamon. Stir until combined – don’t over whisk.

Step Four: Line a muffin tray with paper cases and use a tablespoon to scoop around two spoonfuls of the mix into each case.

Step Five: Bake for 18-20 minutes.


Notes:

You can substitute the Alpro plain yogurt for any low fat yogurt if you’re not intolerant to dairy products.

Honey or Maple Syrup would probably work instead of Sweet Freedom Fruit Syrup.


Nutritional Information:

This recipe made 14 muffins, so each came out to 97 calories with 15.8g or carbohydrates, 1.8g of fat and 3.5g of protein.
